Ingredients
- Mixed greens (make sure there is some spinach and rocket in there, maybe even add some parsley)
- Apples (Pink Lady is our fav)
- Pomegranate seeds (some supermarkets sell these pre-removed)
- Walnuts or pecans (you want about 9 per serve)
- Feta cheese (swap with ricotta if wanting something lighter)
Dressing
- Oil (1/4 cup)
- Balsamic vinegar 1 tbps
- Honey 1 tsp
- Garlic powder ½ tsp
- Whole black peppercorns 1 tsp
- Fresh chilli or dried chilli flakes – depends how hot you like it!
Preparation
- Mix all the ingredients for the dressing. Add some extra seasoning if necessary.
- Mix the other ingredients in a bowl or directly on a plate.
- Add the dressing and serve immeadiately.
