Broccoli soup with smoked trout

Ingredients for 4 persons

  • 750 g broccoli (fresh or frozen)
  • 100 g smoked trout
  • +/- 170 g potatoes
  • 60 g Parmesan
  • 1 l to 1,2 l of stock
  • Salt - pepper

Directions

  • Cook the broccoli and potatoes until tender in the stock (for about 20 minutes)
  • Add the smoked trout
  • Add the grated Parmesan or Parmesan powder (or afterwards in the soup bowl after serving)
  • Mix the whole until very thin
  • Season to taste and adapt the texture if needed (add some stock if the soup is too thick or add Dutch rusks if the soup is too fluid)
