Salmon skewers

For 8 pieces of 55 grams each

Ingredients

  • 100 g salmon fillet (fresh or frozen)
  • 1 egg
  • 1 tsp dill (dried or frozen)
  • Salt, pepper
  • 2 tbsp flour
  • 1 tbsp rapeseed oil
  • 160 g cucumber
  • 8 cherry tomatoes
  • 8 toothpicks

Preparation

  1. Wash the salmon, pat it dry, and cut it into 8 cubes. Whisk the egg with dill, salt, and pepper. Mix the salmon cubes well with the egg mixture, ensuring all sides are coated with egg. Spread the flour on a plate. Roll the salmon cubes in the flour so that they are thinly coated.
  2. Heat the oil in a non-stick pan and fry the salmon for 3-4 minutes on all sides.
  3. Wash the cucumber and cut it into 8 slices. Skewer 1 salmon cube, 1 tomato, and 1 cucumber slice onto each toothpick.
